Apple Fritters With Caramel Sauce
Wow. A mountain of sweet, sticky, fruity deliciousness. All in just a few minutes. Surely that is too good to be true?! Wrong. These are just delicious and such a simple treat. I added a little almond milk to the caramel to make it more creamy and I think it was a real winner.
Ingredients (serves 2)
6 tablespoons of chia seeds in 200ml of water
50g of buckwheat flour
2 teaspoons of cinnamon
for the sauce
3 tablespoons of maple syrup
3 tablespoons of coconut sugar
30ml of almond milk
a large pinch of salt
Soak the chia seeds in water and leave to one side.
Peel the apples, then core and chop into small chunks. Place them in a small saucepan and cover with boiling water. Then leave to simmer until the apples begin to soften.
Once soft, drain the water and combine them with the chia seeds and other ingredients into a bowl (except for those in the caramel sauce). Mix thoroughly.
Heat enough coconut oil to coat a frying pan, then shape the mix into fritters and cook for about 2 minutes, or until they begin to go golden brown. Then flip them over to cook other side.
In a small saucepan, combine the ingredients for the caramel sauce and allow to simmer for about a minute or so to thicken.
Once everything is ready, serve by pouring over the caramel sauce.
