Kiwi and Banana Muffins

This week’s recipe is such a great snack or sweet treat to impress friends at a

picnic or afternoon tea! I love making healthy muffins and cakes to share with

friends – there’s something so special about enjoying a treat together but it’s

great to do it without feeling sugared out! This recipe is a twist on banana bread

muffins, with the addition of Zespri® SunGold kiwifruit. Yellow kiwis are

different to your average green kiwi and offer extra sweetness to hit your sweet

cravings whilst giving you a good boost of vitamin C too!

Ingredients (Makes 10 large muffins)

2 Zespri SunGold kiwifruit

2 ripe bananas

1 teaspoon of vanilla powder

300g of flour (I used 200g of buckwheat and 100g of tigernut flour but you can

use any type)

1 tablespoon of coconut oil

75ml of milk of choice

150ml of aquafaba (juice from chickpea can)

2 teaspoons of coconut sugar

juice of ½ a lemon

1 teaspoon of baking powder

½ a teaspoon bicarbonate of soda

Preheat the oven to 180c.

In a large mixing bowl, mash the bananas. Then add all the remaining

ingredients, except for the kiwi and milk. Add the milk until you have a thick,

smooth mix.

Peel the kiwi and then cut into small pieces. Stir these into the mixture.

Line a muffin tray with muffin cases and pour the mixture in. Place in the oven

for about 20-30 minutes, until the tops begin to brown and you can pull a

cocktail stick out clean.
