Pea, Bean and Mint Salad

200g of frozen edamame

200g of frozen peas

1 can of borlotti brown beans

2 large handfuls of mint

1 slice of lemon

2 tablespoons of olive oil

salt and pepper

Boil the peas and edamame for about 4 minutes until hot through but not soft. Then drain and rinse under cold water.

Drain the beans and mix into a large serving bowl with the peas and edamame.

Squeeze over the lime, mixing in the oil, salt and pepper. Then finely chop the mint and mix it in well before serving.
