Peanut Butter and Coconut Granola
This flapjack inspired breakfast recipe is delicious. It is a great base for adding other things, like dried fruit but the coconut gives it plenty of flavour as it is. It goes perfectly crunchy and you get little clusters which I love!
Ingredients (makes 1 jar)
100g of jumbo oats
75g of smooth peanut butter
3 tablespoons of date syrup
60g of desiccated coconut
4 teaspoons of coconut oil
Preheat the oven to 180c.
Melt the coconut oil if needed, then combine all the ingredients in a mixing bowl and mix well.
Line a baking tray with baking parchment, then press the granola mix into the tray with a spatula, almost as though you are making a flapjack. Bake for 15 minutes, then remove from the oven. Use the spatula again to break it into pieces and mix around so that the soft parts are exposed. Bake for another 10 minutes, then mix before a final 10 minutes in the oven.
Remove from the oven and leave to cool and set.
