Kiwi Overnight Oats
Overnight oats are my go to on-the-go breakfast. Most mornings, I am up and out of the house really early so I try to get my bag packed the night before to make things nice and easy when I wake up. You can’t go too far wrong with overnight oats, so I love mixing it up and playing with different flavour combinations and at the moment my favourite is kiwi and apple. There is something so refreshing about the kiwi and it has a real summer vibe about it so when Quaker Oats announced that they were giving away these cute mason jars, one of which being a kiwi design, I was so excited to get experimenting.
I recently made a commitment to myself to meditate every single day, even if it is only for ten minutes and with breakfast made the night before, I have an extra ten minutes so I can get my meditation practice done before I leave the house which sets me up so well for the day. It sounds silly, but having everything done the night before really does make such a difference and I have noticed such a change by giving myself the extra time in the morning.
what you’ll need
(Serves 1) | NB: double recipe to fill jar
40g of Quaker Traditional Rolled Oats
50g of coconut yoghurt
100ml of almond milk (or milk of your choice)
½ a green apple
what to do
Start by grating the apple using the larger holes of your grater – this will give the oats a little extra texture. In a mixing bowl, add the apple, almond milk, oats and coconut yogurt and stir well.
Peel the kiwi and half it length ways, then slice along each half. Place a few pieces of kiwi at the bottom of the jar, then spoon in some of the oats. Alternate between a few slices of kiwi and a layer of oats until you reach the top of the jar. Then screw on the lid and place the jar in the fridge overnight.
In the morning, grab the jar on the way out the door for a simple breakfast on the go!
