Peanut and Apple Granola

what you’ll need

  • 150g of dried apple rings

  • 200g of oats

  • 70g of peanuts

  • 1.5 tablespoons of coconut oil

  • 2 teaspoons of honey

  • 2 teaspoons of cinnamon

what to do

Preheat the oven to 180c and line a baking tray with greaseproof paper.

Roughly chop the peanuts then place them in a mixing bowl with the oats.

Melt the coconut oil in a small pan, then stir in the honey and cinnamon. Then pour into the mixing bowl and stir well until the oats and nuts are evenly covered.

Spread the mixture onto a baking tray and bake for 15 minutes. Mixing at 5 minute intervals to prevent from burning.

Roughly chop the apple pieces while the granola bakes. Once it is cooked, remove from the oven and allow to cool - it should go nice and crispy. Then mix in the apple chunks and store in an air tight container.
