Sweet Paprika Almonds
One of the things that I get asked a lot is what I snack on and I always struggle to think of something vaguely normal as I seem to be pretty good at just picking at leftovers these days! These almonds make the best snack! I was so excited by this recipe when I first made it that I had to make a second batch just to have something to photograph. The recipe makes a small bowlful but you can make more and keep it in a jar after its cooled. There is just enough maple syrup to make sure the paprika sticks but not enough to make them overly sweet.
2 tsp maple syrup
1 tsp paprika
Preheat the oven to 180c.
Place the almonds on a baking tray - I like to line it with baking paper but it isn't totally necessary if you don't have any!
Add the maple syrup and paprika and mix so that the nuts are thoroughly and evenly coated in the sticky mix.
Roast in the oven for 5 minutes, then leave to cool and set before eating. Once cool they can be stored in an airtight container for about a week.
