Savoury Porridge with Spinach and Mushrooms

I am so excited to share this recipe with you! I have toyed with the idea of a savoury version of my favourite dish on many mornings but always opt for something sweet for fear of disappointing myself! I finally bit the bullet and went for a savoury porridge. I am now totally and utterly obsessed! This is so hearty and comforting without leaving you heavy and full making it a perfect breakfast, lunch or dinner.

I chose to include mushrooms, spinach and tomatoes which is my favourite combination but have tried other vegetables too which have also worked well so feel free to use this as a base and get experimenting - I would love to hear your favourites!

what you’ll need

  • 40g porridge oats

  • 200ml of water

  • 100ml of almond milk

  • 2 handfuls of spinach

  • 3 mushrooms

  • 4 cherry tomatoes

  • 1 clove of garlic

  • 1 teaspoon of dried sage

  • 1 teaspoon of tamari

  • 1/2 a teaspoon of olive oil

what to do

Start by adding 200ml of boiling water to a pan with the oats and leave to sit for about 5-10 minutes until the water has been absorbed.During this time, slice the mushrooms and quarter the tomatoes.

Add the almond milk, sage and tamari to the pan and turn on a low heat, stirring occasionally.

In a separate pan, crush the garlic and add the olive oil, mushrooms, tomatoes and spinach and soften gently.

As the porridge starts to thicken, increase the heat and stir constantly for a minute or two. Then add the vegetables and mix them in evenly before serving.
