Cashew Breakfast Smoothie

photo 2 I think this is the creamiest smoothie I have ever made! It is so amazingly filling that one large glass will definitely keep you going until lunch time and it may be a little much for your everyday go-to breakfast but it is the perfect thing when you are working out, or to treat yourself with on a lazy Sunday when a summery smoothie just wont do!

Cashews are amazing for giving you slow release energy and are packed with 'heart-healthy' fats. They are also full of essential minerals such as magnesium, zinc, iron, manganese and selenium which are all needed to help our bodies function healthily. Combined with the antioxidant properties of the berries, this smoothie really is a healthy treat that will give your body an awesome energy boost. I like to add in a little hemp protein in my morning smoothies which really thickens this out so you can always add a little extra liquid if you struggle to drink it through a straw!

Ingredients (makes 1 large glass - or 2 small!)

250ml of almond milk

3 tbsp of oats

1 tsp of coconut oil

1 large handful of cashew nuts

1 handful of frozen berries

1/2 banana (frozen or fresh)

1 heaped tsp of ground flaxseeds

1 heaped tsp of chia seeds

Optional: One  tbsp of hemp protein - this will make the smoothie really thick so you may want to add a little extra milk or eat with a spoon!

Place the cashews, coconut oil and almond milk into a blender and whizz for about 30 seconds to a minute until it begins to become smooth. Then add in the frozen berries and banana. Once everything is nicely blended, add the ground flax seeds, chia seeds and hemp protein if you are using it. Blend for a few more seconds to mix everything together.
