Sun-Dried Tomato and Chestnut Spread

So this recipe came about via totally random experimentation. I had picked up a packet of chestnuts in the supermarket with a view to make something Christmassy and while I thought I took one out of the packet, placed a sun-dried tomato on top and then decided that that might be a good place to start!
This spread works as a dip, a topping for toast or rice cakes, or for stuffing vegetables like mushrooms. It has such a rich flavour that it feels pretty indulgent, even though it is a really uncomplicated recipe!
what you’ll need
(makes 1 pot)
130g chestnuts
65g sun-dried tomatoes
3 tablespoons of tahini
2 tablespoons of olive oil
salt + pepper
what to do
Place everything in a food processor (using the small bowl attachment if you have one) and whizz it all up. Add salt and pepper to taste. You can choose to keep it chunky or keep it going until you have a smooth dip - I've tried it both ways and really like it smooth for spreading/dipping and chunkier for stuffing veg!
