Fig and Chia Salad

I try to listen to my body as much as I can, particularly when it comes to what I eat. At the moment I am craving light and fruity food so when I spotted some delicious figs in my local green grocer I picked one up for my porridge. But when I didn't fancy porridge, I decided to save it for lunch and have a little play around and I really love the result of this light, pretty and fruity plate!

Ingredients (serves 2)

1 chicory bulb

1 fig

1/2 a cucumber (I used 2 mini cucumbers!)

1 tablespoon of chia seeds

1 tablespoon of flaked almonds

For the dressing

30ml brown rice vinegar

1 teaspoon of white miso paste

1/2 teaspoon of tamari

Cut the chicory in half, then thinly slice. Then chop the cucumber into small pieces and add both of these to a bowl.

Mix the dressing ingredients in a small bowl, then pour over the salad.

Half or quarter the fig to top the salad, then sprinkle with the flaked almonds and chia seeds to serve.
