Apple Crumble

My sister is a bit of a crumble whizz - she will whip up one of these in a few minutes, with her eyes closed, standing on one leg... well, almost. So as part of my #AnniesAdvent series on YouTube, Ellie showed me how to make her favourite Apple (and Raspberry) Crumble.

Ingredients (serves 4)

For the fruit

1 large cooking apple

125g fresh or frozen raspberries

2 tablespoons cinnamon

1 teaspoon coconut palm sugar

For the crumble topping

180g oats

80g buckwheat flour

10g coconut palm sugar

120g maple syrup

3 tablespoons of coconut oil

pinch of salt

2 tablespoons of cinnamon

Preheat the oven to 180c.

Make sure that the coconut oil is melted, then combine all of the ingredients for the topping in a bowl. Use your hands to mix thoroughly, squeezing into tight balls so that you get small lumps.

To make the fruit layer, chop the apple into small cubes, discarding the core. Then soften in boiling water with the cinnamon for about 2 minutes. Then drain most of the water, adding just a little to line your baking dish. Add the apples to the dish and then the raspberries. Then dust with a little coconut palm sugar.

Then add the topping, pressing down firmly, then dust again with a little more sugar and drizzle with melted coconut oil. Bake in the oven for about 40 minutes, checking every so often to prevent burning. Then serve immediately.
