Coconut Yoghurt Drops
This week's recipe is super simple - I have been rushing around like mad and wanted to think of something simple but sweet to have as a pick me up, particularly in the evening when I am craving a bit of dessert after my dinner. I initially made this as a 'cake' a few weeks ago and it was a real dinner party hit. I decided to make them individually so that they were easier to pick at, but it works really well both ways.
These are perfectly sweet and are great served with extra berries, or even a drizzle of honey or nut butter. They keep in the freezer for a week or two.
200g of coconut yoghurt
1 handful of fresh strawberries or a few teaspoons of thawed frozen berries
Slice the strawberries and place a slice in each mould. If you are making this in a cake tin, line the tin with cling film and then just arrange the sliced/thawed berries on top.
If you are using thawed frozen berries, spoon a small amount into each mould.
Then cover the berries with coconut yoghurt, using a spoon to smooth it over.
Place in the freezer for 1-2 hours, until they come away from the mould easily.
Remove from the moulds or tin to serve.
