Blueberry and Hemp Overnight Oats

I've been really good lately at getting myself up and out of the house nice and early. I try to workout in town and stay there for the day so I've been experimenting with on the go breakfasts to refuel my body after working out and keep me going until lunch time. I've always loved overnight oats and chia pudding so I was bound to impress myself combining the two. I add hemp seeds for the protein - it is so important to get some protein after you work out to help your muscles repair. It also is great for helping you to feel full too. I like to add a pinch of salt - sometimes I get cramp after a serious workout so it helps to prevent that from happening!

The great thing about this recipe is that all you have to do is combine all the ingredients in a jar and leave it in the fridge ready to grab in the morning before you run out the door. I make it in a jar which means that it travels really well too.

ingredients (serves 1)

40g of oats

a handful of blueberries

a pinch of salt

3 tbsp of chia seeds

3 tbsp of hemp seeds

200ml of oat or nut milk

a pinch of flaked coconut pieces

Place all the ingredients in a jar. Secure the lid and shake well.

Leave it in the fridge to set for at least 30 minutes, but overnight works best.
