Super Green Soup

image1 Every so often I like to take a little break away from thinking about, cooking and eating food. Even working with healthy food can occasionally leave me feeling a little bit full and run down so I find that giving my digestive system a break for a few days is a great way to reset and rekindle my love of food. Sometimes this will be a day or two of juice, sometimes of liquids (so juice, soups and possibly smoothies too) or sometimes it will just be being a little more mindful of what I am eating and how it makes me feel. This week I decided to have a few days of liquids as I wanted to keep exercising and juice just doesn't give us enough fuel for a spin class or boxing session! I've been enjoying some of my favourite juices and soups as well as experimenting with some new ones too. This cleansing soup was a post-boxing creation where I felt like I needed something fairly substantial with some protein and healthy fats in order to keep me going! It really is such a great find - it is so full of goodness whilst still being really clean and totally healthy. The base is made of peas and spinach which provide great sources or protein, iron and calcium as well as lots of other vital nutrients and minerals. The avocado brings in some essential fats as well as creating a delicious, creamy texture that gives it a really luxurious  thickness and helping you to feel full rather than deprived which is so important to me! I love to squeeze lemon on top too to give it an added tang as well as providing awesome detoxifying properties and alkalising our bodies. This bowl really is just a wonderful blend of goodness that your body will thank you for! image7 Ingredients (serves 2) 350g of frozen peas 125g of spinach 1 avocados 3 cloves of garlic 2 lemons (optional) 1 teaspoon of cumin 1 teaspoon of coriander seeds 500ml of boiling water salt & pepper a drizzle of olive oil (optional) Start by placing the cumin, coriander seeds and a little olive oil (use a teaspoon of water if you prefer not to add the oil) in a pan on a medium heat and add the crushed garlic. After a minute or so add the frozen peas and stir thoroughly. After about 3 minutes, the peas should begin to soften slightly. At this point add the spinach and stir continuously until it has shrunk down. Then add the water and mix everything together, leaving to simmer for a few minutes. Pour the contents of the pan into a blender and blend until smooth. Then add the avocados and blend again. Place the soup back into the pan and heat through until it is just about to boil. Place it into bowls and serve with lemon. image5
