Orange Infused Porridge

image-12 I've spent the last month totally obsessed with mince pie filling. In a mince pie, on porridge, just on it's own with a spoon... well this porridge was inspired by mince pies on a wintery, post Christmas morning when all the mince pies had been eaten! And whats more, this delicious bowl is also a great immune system booster in these winter months with its high concentration of Vitamin C. Oranges also contain a whole load of antioxidants as well as having anti-inflammatory properties too.

Ingredients

100g oats

1 tbsp chia seeds

50g sultanas/raisins

1 small orange

100ml almond milk

Toppings

fresh ginger

cinnamon

maple syrup (I use vanilla infused which I make by adding a vanilla pod to the bottle!)

Place the oats in a pan and cover with boiling water. Allow to sit for about ten minutes until the water has been absorbed.

Add the orange juice and almond milk and turn on a low heat. Add the chia seeds and sultanas and stir occasionally.

Once the porridge reaches the consistency you like, remove from the heat and place in a bowl. Top with grated ginger and a sprinkle of cinnamon and drizzle with a little maple syrup to serve.
