Carrot and Pea Shoot Salad

This salad is so simple; just three ingredients and a classic dressing made with ingredients you may already have in your kitchen. Quick and easy dishes really can be packed with healthy vegetables and even better - vegetables that don't require cooking time! Feel free to swap out any veggies you prefer or might not have to hand in your kitchen - it's all about tailoring your food to what suits you best. Alternatively, you could also sprinkle some nuts or seeds over this salad to take it to the next level. IMG_3902

Ingredients

2 carrots, sliced lengthways and ribboned with a peeler

2 handfuls pea shoots

1 shallot, sliced lengthways

Dressing

Juice of 1/2 - 1 lemon

1 teaspoon of mustard

1 teaspoon of honey

1 clove of garlic, minced

A sprinkle of salt and pepper (optional)

To make the dressing, mix all of the ingredients together in a small bowl until all mixed together smoothly.

Use your peeler to make carrot ribbons by running it lengthways down the carrot. I like to cut the carrot in half and use the peeler along the flat edge of the carrot in order to get wider ribbons, while using the peeler on an uncut carrot will create slightly thinner ribbons.

In a bowl, assemble the handfuls of pea shoots and sliced shallots adding the carrot ribbons on top. Add the dressing and toss the salad to ensure all of the veg is coated and the flavour evenly distributed.
