Sweet and Spicy Edamame Beans
So I have FINALLY made it in to the kitchen to get a recipe together that I can share with you. It's been a bit of a crazy few weeks, so sorry for taking so long to get it updated! I'm really into edamame beans at the moment! They are a great source of protein and so easy to make really flavoursome and delicious. This variation is one of my favourites and I really hope you love it to. It pairs well with loads of different things, or makes a great snack if you're looking for something green and nutritious!
Ingredients (serves 2)
250g of shelled frozen edamame beans
2 cloves of garlic
50g of flaked almonds
2 teaspoons of tamari
2 teaspoons of maple syrup
2 tablespoons of sesame oil
1 teaspoon of chilli flakes (optional)
Crush the garlic and add it to a pan with the sesame oil and flaked almonds. Stir continuously for about 2 minutes until the almonds begin to brown.
Add the edamame to the pan with the tamari and chilli flakes. Mix occasionally to ensure the beans cook evenly. After 5 minutes or so, the beans should be evenly cooked through. At this point add the maple syrup and stir for one more minute.
Remember that the sugar in the syrup will be really hot, so leave them a minute or two before eating!
