Orange and Coconut Granola

In the winter, I love spiced granola, with nutmeg and cinnamon for a warming feel. As we start to see a bit of sunshine, its great to lighten things up a little and keep things fresh. This granola does just that and really is so delicious. The orange gives it a light, zesty flavour, while the coconut adds a tropical feel. The macadamias are wonderful for texture, giving it crunch without the heaviness of lots of seeds. Sprinkle it on coconut yoghurt or eat it with your favourite plant milk.  Ingredients (makes 1 jar - around 10 servings)

180g/2 cups jumbo oats

200g/1 and 1/2 cup macadamia nuts, roughly chopped

80g/1 cup desicated coconut

2 tablespoons of chia seeds

1 large orange

2 tablespoons of coconut oil (melted)

1 teaspoon of vanilla bean powder

120ml/1/2 a cup of honey or maple syrup

a pinch of sea salt

Preheat the oven to 180c and line a baking tray with baking paper. Grate the orange and place the zest to one side, then juice the orange and keep them separately

In a large bowl, add all of the dry ingredients (oats, macadamias, coconut, chia, orange zest, salt, vanilla bean powder) and stir to combine

Add in coconut oil, orange juice, honey/maple syrup and stir thoroughly

Spread the mixture evenly onto the lined baking tray

Bake for 10 minutes, then stir, and bake for another 10 minutes (or until desired crunchiness)

Let mixture cool and then store in an airtight container
