15 Minute Granola

photo 3 This recipe is so quick and easy, it really is perfect for those days when your preparation has failed you before breakfast and with no food processor needed there is minimal washing up too. I love this granola on top of coconut yoghurt, fresh fruit or a smoothie bowl for a great energy boost. The recipe is purposefully not too sweet - I prefer to have the option in the mornings and can always sweeten it to suit my mood, but if you know you will always have a sweet tooth first thing, then of course you can add more sweetener to cook.

Ingredients

185g of buckwheat groats 150g of jumbo oats 100g of sunflower seeds 150g of nuts (I used almonds and walnuts) 2 tbsp of cinnamon 3 tbsp of maple syrup

Pre heat the oven to 180c.

Place all the ingredients into a mixing bowl, breaking up any large nuts with your hands and stir together.

Pour the granola mix onto a baking tray and bake for 10-15 minutes or until brown, stirring a few times to make sure it cooks evenly.

Allow to cool and serve or keep in an airtight container for up to 3-4 weeks.
