10 Minute Tomato Sauce

This is a super simple tomato sauce that goes with just about anything! I like to put this with pasta, fish, quinoa, veggies – pretty much anything that I might want to add a bit of extra flavour to without having to think too hard!

It is a real go-to recipe and sometimes I will make it in a big batch to keep in the fridge. I can then go back to it during the week and either heat it up or eat it cold with other leftovers at lunch. It works with pretty much anything and adds a bit of flavour to something like pasta, quinoa or even roasted veggies.

It only uses a handful of ingredients, ones that I almost always keep at home so when I am lacking dinner inspiration it’s a really easy but delicious option!

Ingredients (serves 1-2)

80g of cherry tomatoes

1 small white onion

2 cloves of garlic

1 tablespoon of olive oil

Slice the tomatoes into halves or quarters and finely chop the onion. In a small non-stick pan, heat the oil and add in the garlic – I use a garlic crush, but you can finely chop it if you prefer. Add the onions and stir gently until they soften.

Then add the tomatoes and stir well before covering with a lid and allowing to simmer for 5-10 minutes. Stir occasionally so that the sauce doesn’t stick. Once the tomatoes are totally soft and the juices are released, the sauce is ready to eat!
